  1. Heat olive oil in a large saucepan over low to medium heat.
  2. Stir in onion, garlic, red pepper and chili powder (optional) until onion is softened.
  3. Add chayote and cilantro.
  4. Continue stirring for 3 to 5 minutes.
  5. Add water and bouillon to the saucepan and turn up heat to simmer for 20 to 30 minutes, stirring frequently until bouillon is dissolved and chayote is tender.
  6. Season with salt and pepper to taste.
  7. Pour mixture into a blender and purée until smooth.
  8. Pour into bowls and garnish as desired.
