  1. Preheat oven to 375 degrees Fahrenheit.
  2. Heat 2 Tbsp of olive oil in a 12? cast iron skillet over medium heat.
  3. Add kale and sauté for 5 minutes.
  4. Add onion, garlic, salt, pepper, and seasoning and continue sautéing for an additional 4-5 minutes.
  5. While vegetables are sautéing, whisk together eggs, half & half, and cheese in a large bowl.
  6. Fold the sautéed vegetables into the egg mixture.
  7. Remove the skillet from the heat and add the balance of the olive oil, evenly coating the skillet.
  8. Pour and spread the egg and vegetable mixture into the skillet. Top with the remainder of the shredded cheese.
  9. Place the skillet in the oven and bake at 375 degrees Fahrenheit for 30 minutes, or until frittata is set.
  10. Let your frittata sit for five minutes before slicing.
