Since launching our new Pancake & Muffin Mixes, we have listened to your feedback about the mixes and would like to address some of your comments and questions so you can make the most delicious and Keto-friendly baked goods possible!
For starters, whey protein isolate can often affect the moisture of a baked product and cause a drying effect. The walnut meal/flour, similar to other nut-based and gluten-free flours, also has a tendency towards dryness both during and after baking.
The following are a few tips to help minimize this issue and help you enjoy the experience of eating our unique baking mix:
Follow the instructions on the package. Err on the side of undercooking as the pancakes will continue to cook a bit after removing from the heat source. Cover the pancakes if they aren’t served right away to help keep them moist.
Follow the instructions on the package but allow some flexibility with the cooking time. A recommended range is 16 to 20 minutes, allowing for the additional cooking that occurs after removing from the oven. As with the pancakes, cover the muffins after removing them from the oven to help keep them moist.
For Donuts, Waffles, and Mug Muffins
Follow the instructions on the package and follow the individual directions for your donut/waffle maker. As with the pancakes and baked muffins, these baked goods will continue to cook a bit after removing from the heat source. They should also be kept covered if not eaten right away to preserve their moisture.
- When making any of the above items, you can also add sour cream, Greek whole milk yogurt, additional eggs and/or butter to the baking mix to give your baked creations an even richer flavor. Make sure to adjust the added liquid (i.e. nut milk/water) to prevent over-thinning of the batter.
