Ingredients
Chocolate Cake
- ¼ cup butter, softened (½ stick)
- ⅓ cup Monksweet or equivalent low-carb granular sweetener of choice
- 4 eggs at room temperature
- 1 cup sour cream
- 1 tsp vanilla extract
- 1 bag (3 cups) Fearless Keto Chocolate Pancake & Muffin Mix
Cheesecake Swirl
- 8 oz cream cheese, softened
- ¼ cup low-carb powdered or confectioner’s sweetener (can also use a granular sweetener, but consistency might not be as smooth)
- 2 eggs at room temperature
- 1 tsp vanilla extract
- Optional topping: 1 oz sugar-free dark chocolate, finely chopped (or sugar-free chocolate chips)
Instructions
Chocolate Cake
- Oil a 9” x 13” baking dish and set aside.
- Preheat oven to 350 degrees Fahrenheit.
- In large bowl, use a hand mixer to blend the butter and the sweetener until fluffy.
- Beat in the eggs, followed by the sour cream and vanilla extract.
- Use a large spatula to fold the Fearless Chocolate mix into the wet mixture in the large bowl and blend well to form a smooth batter. Note: batter will be fairly loose but will thicken as it stands.
- Pour the batter into the baking dish and set aside.
Cheesecake Swirl
- In a separate large bowl, use a hand/electric mixer to blend together the cheesecake ingredients until smooth.
- Use a spoon to drop the cheesecake batter evenly over the top of the chocolate cake batter in the baking dish. Use a knife to gently swirl the cheesecake batter into the cake batter.
- Optional: sprinkle finely chopped chocolate or chocolate chips over the top.
- Bake for approximately 35 to 40 minutes, covering the dish with foil after 30 minutes, until edges are a golden brown and separate from the sides of the dish. Note: the center will still be slightly loose, but will continue to cook after removing from oven. Baking time should not exceed 45 minutes.
- After removing from oven, keep dish covered and allow to cool to room temperature before placing in refrigerator for a minimum of 2 hours. This will ensure that the cheesecake hardens and will be easier to slice.
- Freeze any leftover slices in an airtight container.
