Ingredients
- 1½ cups heavy whipping cream
- ½ cup Powdered Monk Fruit Sweetener
- 3 Tbsp unsalted butter
- ¼ tsp xanthan gum
- 1 tsp vanilla extract
Directions
- Place all ingredients in a medium sized saucepan.
- Bring to boil over medium heat, stirring gently until smooth consistency.
- Reduce heat and simmer for 30 minutes, stirring regularly to prevent scorching.
- Keep watch so that the mixture does not continue to boil.
- Remove from heat. Mixture will continue to thicken as it cools.
Can I sub the monk fruit for eriteritritol or Stevie, I don’t find monk fruit in my country.
Cátia, nice to meet you! You can definitely substitute monk fruit for either Erythritol or Stevia. The Lakanto powdered monk fruit we link to is actually already a blend between Erythritol and Monk Fruit sweetener anyways :).
