- 1½ cups heavy whipping cream
- ½ cup Powdered Monk Fruit Sweetener
- 3 Tbsp unsalted butter
- ¼ tsp xanthan gum
- 1 tsp vanilla extract
- Place all ingredients in a medium sized saucepan.
- Bring to boil over medium heat, stirring gently until smooth consistency.
- Reduce heat and simmer for 30 minutes, stirring regularly to prevent scorching.
- Keep watch so that the mixture does not continue to boil.
- Remove from heat. Mixture will continue to thicken as it cools.
