Low Carb Glazed Lemon Dream Bars

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Line a 9″ x 13″ baking pan/dish with parchment paper.
  3. In a large bowl, whisk together the almond flour, coconut, oat fiber, flaxseed meal, xanthan gum, baking powder, and salt.
  4. In a separate large bowl, beat together (using hand or electric mixer) the butter, sweetener, lemon juice, and lemon zest until light and fluffy.
  5. Beat in eggs, one at a time, until well blended.
  6. Combine the dry ingredients and the wet ingredients, blending well to form a smooth batter.
  7. Pour batter into the pan/dish and bake in the oven for 30 to 35 minutes.
  8. Allow to completely cool on the counter.
  9. Using a large mixing bowl, whisk together the powdered sweetener, lemon juice, and xanthan gum until it reaches a smooth glaze consistency.
  10. Pour the glaze over the lemon bars and spread evenly.
  11. Place dish in the refrigerator to allow glaze to harden before slicing into bars.
